I’m having a so-so day myself because technology is not being my pal today. I really want to slam my Camiseta Stade Rennais FC phone on the floor and stomp on it, but I’m trying to play nice.

The reason I started RER was to talk about myself on the Internet in hopes my best pal and mother would read it make the world a better place.

Given my disappointment with technology I am not touching my stove today. F-that.

But I want a delicious lil treat to enjoy. So, I made Camiseta Celta de Vigo a version of my Raw Fudgy Oat Cookies and swapped rice cereal for oats. and No Bake chocolate Cookie balls were born…

No Bake chocolate Cookie Balls

{Makes 9. Gluten free. No Bake.}

Ingredients:

1/2 cup almond butter

1/2 cup sf maple syrup OR agave

3/4 to 1 cup rice cereal

1/4 cup cocoa powder

Mix ingredients. form into balls (I sprayed my hands with non-stick spray to keep from sticking to me). Optional: Roll in extra cocoa powder or coconut to keep from sticking. I didn’t, but I don’t mind a little mess. Refrigerate for 1 hour to set. store in refrigerator.

The extra good news is you don’t really have to form then into balls and can just eat the batter!
